The honeydew honey is very special, because its characteristics call it so. It is not produced from the nectar of the flowers, so its content of natural honey sugars (glucose and fructose) is reduced. Its level of vitamins and minerals is higher than in other blooms. It is also only produced in even-numbered years, i.e. every two years. The only region that produces this type of flower is the mountainous region of Santa Catarina.
